I don&#8217;t blame the lard &#8211; it was the recipe.  Lesson learned: don&#8217;t <span style="text-decoration: line-through;">trust recipes you find on the internet</span> count on a shot in the dark for perfect Pan Sobao the first time.  The experiment will continue as long as I still have some lard to sacrifice for perfect, fluffy white bread!</p>
